This Ancient Vine Carignan comes from the historic Tollini vineyard, a head trained, dry farmed site from original mother vines established on the ranch in the mid 1940’s. This vineyard reflects Novum’s commitment to heritage farming and expressive, site-driven wines.
Crafted as a carbonic-macerated chillable red, Carignan shows bright cherry, raspberry, and pomegranate, with a hint of spice. Juicy and smooth, with soft tannins and structure, this is a versatile, year-round wine best enjoyed slightly chilled.
